This climat is situated alongside the former Roman road that links the town of Auxerre with the town of Tonnerre. At this place, the road climbed the hillside up towards the plateau in the direction of Tonnerre. As an extension of the Grand Crus, this is the most diverse of the Premiers Crus with a very complete profile: mineral, floral, oiliness, body and a rich character.

The beautiful white gold hue with greenish tinges. This 1er Cru offers an exceptional aromatic profile with mineral notes and spices. Palate: the perfect balance between strength, freshness, sweet fruity notes and intense floral aromas. A complex, elegant and remarkbly harmonious wine.

Winery introduction:

In 1815, at the end of the Napoleonic wars, Charles Louis Noël Billaud returned home to Chablis and founded Domaine Billaud-Simon. The Domaine remained strictly a family business until its acquisition by Domaine Faiveley in July 2014. Since then, Domaine Billaud-Simon is managed separately from Domaine Faiveley: It has its own vineyard, winemaking facilities and remains dedicated to upholding the same style of the wines while continually striving to improve their quality. With ownership in four Grands Crus vineyards and four Premiers Crus vineyards, the Chablis wines of Domaine Billaud-Simon exhibit elegance, balance, and pure Chardonnay fruit. Delicious when young, they evolve beautifully with some aging.
