In 1921, Maison Cazes purchased the Mas Joffre in Rivesaltes, the former home of Marshal Joffre. Made from vines that belonged to this Catalan hero, the "Canon du Maréchal" is a range of "relaxing" wines that are fruity, soft, crisp and go elegantly and easily with any meal.
Winemaking: 2 different ways of winemaking.
- Carbonic maceration at high temperature for part of the grapes.
- Others followed a short maceration before the alcoholic fermentation which is done at low temperature. After pressing, the fermentation process is completed at 20°C.
Ageing: Bottled 6 months after the harvest and stored in air-conditioned cellars.
Tasting : Serve 14°C to keep all the freshness of the aromas. On the palate, red fruit flavors(redcurrant, raspberry, cherry) with spicy notes. It is a round and velvety wine.
A historic and family estate in the heart of Rivesaltes since 1895. A terroir in the Agly Valley, in the foothills of the Corbières. Clay-limestone with some schistose materials as well as siliceous pebble. Soil perfectly suited for the production of high quality wines. More than 200 ha converted into organic and biodynamic culture (since 1997).
