The Gold of Salento, as the Fiano grape is defined.
Wine obtained from selected Fiano grapes harvested in the first decade of August, cooled to 4°C, destemmed and left in contact with the skins for 24 hours. Then must is fermented for 10 days at 15°C and decanted in steel prior to bottling.
